Borage – Borago officinalis
Borage is an annual with blue, star-shaped flowers that hang downward and are edible. Use in a salad or use as a garnish. Bakers candy them for decoration. Young borage leaves can be cooked like spinach and taste like cucumber. Borage is also known as bee’s bread because honey bees love the nectar. Large and sprawling plants with leaves that are covered with bristly hairs.
